Pacifico Biolabs, a mycelium fermentation startup, has raised €7 million in Series A funding to scale production and expand across Europe.

The round included investment from Stray Dog Capital, TGFS, Sprout & About Ventures, Simon Capital, FoodLabs, and a regional brewery partner.

Founded in 2022 and based in Leipzig, Germany, Pacifico develops protein ingredients using mycelium fermentation technology.

Instead of building costly fermentation facilities, the company produces protein using existing beer brewery tanks, making use of underutilised industrial capacity.

As beer consumption declines across Europe many breweries have excess fermentation infrastructure. Pacifico’s model repurposes these facilities to accelerate production while reducing capital costs typically associated with alternative protein manufacturing.

The company also addresses Europe’s dependence on imported feed protein by producing protein locally, closer to consumption markets. Its goal is to strengthen regional supply chains, improve food resilience and support what it describes as greater European protein sovereignty.

By leveraging existing brewery infrastructure, Pacifico aims to lower production costs and move alternative proteins closer to price competitiveness with conventional meat.

The new funding will be used to expand manufacturing in Saxony, grow the team and prepare commercial launches across the DACH and Nordic regions ahead of planned retail expansion in late 2026.

“The brewing industry faces declining beer consumption, leading to many sites having spare capacity as well as entirely closed sites. Our process has been designed specifically to work for beer fermenters, which was certainly a challenge, but one that the team have cracked,” co-founder and CEO Zac Austin tells.
